Recipe for the week

 Hi Everyone! 
 Here is our once per week recipe segment.  There are recipes that are sometimes foods and anytime foods.  Of course, the anytime foods are the healthy foods that you and your family can have anytime.  The sometime foods are the foods that are not quite so healthy and you will need to make choices about.  The decision is yours.

Orange-Carrot Soup – (you will need a blender or food processor)

  • 2 T unsalted butter
  • 1 cup finely chopped onions
  • 6 carrots, scrubbed and cut into 1-1/2 inch  chunks
  • 2 cups chicken stock or canned low-sodium chicken broth
  • 1/2 cup freshly squeezed orange juice
  • 1/4 cup coarsely chopped,, toasted smoked almonds
  1. Melt butter in stockpot over medium heat.  Add the onions and saute’  until they are translucent
  2. Add the carrots, chicken stock, and orange juice.  Turn down the heat and simmer until the carrots are tender – about 20 minutes
  3. Turn off the heat and take the pot off the stove
  4. Ladle the soup from the pot into the food processor.  Puree the soup, until it is smooth, without lumps
  5. Ladle  the hot soup from the processor into the soup bowls
  6. Sprinkle the chopped almonds on top of each bowl of soup
